CAO - Pangkep Culture Exploration

There are many kind of typical foods from South Sulawesi, especially Pangkep regency. The typical foods from Pangkep are: Sop Saudara, Sop Konro, Sop Kikil, Konro Bakar, Range ( Dange), Cucuru Bayao, Gogoso Letta, Kaddo Massingkulu, Onde-Onde Kaluku, Suraben, Tabba-Tabba, Sambal Muttiara, Lawara Tala, Ronto Na Bilokka, Cao, Raca Unti, Langga Peo, Cobe-Cobe Cela Bambang, Gammi-Gammi, Lawi-Lawi Pallu Kacci, Lalapan Daun Jambu Mete and many others.
The typical food from Pangkep that we will discuss in this assignment is CAO.
CAO is one typical food or traditional food, it’s very unique and made from Salemo island (one of many island in Pangkajene regency) and developed by Segeri’s citizen. The unique from this food there in the material and procces to make it.
The basic material from cao is sea worm fish  (one of many spesies from anchovy fish) and shrimp,in buginese called “bale mairo and doang” and the colour is pink. Why the colour is pink? This is due to cover the faded red color of the fish and will also add to the excitement of people who will take the CAO. CAO have many nutrition, antibiotic protein, and vitamins who are high.
“Bale mairo and doangfermented with Shaccaromicces sp. and stored in a bottle until 3 days old. After the fermentation process is complete, usually the food is changed to pink colour.
In ancient times, a person must meet the needs by exchanging food. people who live in the mountains have to exchange the results of nature by the people on the mainland and the people on the island must be transmitted seafood that is in the mainland so that they get food are nutritious. But, they must pass through a distance of miles and kilometers remedy meet each other to conduct the transaction. Thus the island people think and have to find a way out of this problem. A few years later someone from the salemo island got way out is to find food fermentation that can last for years and still fit in consumption. It is CAO. A kind of fish in the fermentation in a closed container.



MATERIALS
1.       1 ounce of bale mairo and doang
2.       1 plate of rice
3.       Yeast
4.       Salt
5.       Food coloring (pink)
TOOLS   
1.       Knife
2.       Plate
3.       Bowl
4.       Bottle
5.       Spoon
HOW TO MAKE
MATERIALS 1                    
1.       Clean the bale mairo and doang.
2.       Then sprinkle with salt to make it more durable.
3.       Enter the bale mairo and doang into a bowl and cover it. After that, put in the refrigerator, let stand for 2 days.
MATERIALS 2                     
1.       1 plate of rice is sprinkled with yeast.
2.       Then save the rice in airtight place. Save for 3 days until the rice is soft.
MIXING PROCESS                    
1.       Mix the material I and material II. Don’t forget the give food coloring. Stir well.
2.       Then put into a bottle for 1 week.
3.       Then "cao" ready to cook.
SUPPLEMENTARY MATERIALS WHEN COOKED
1.       Onion
2.       MSG
3.       Sugar
4.       Grated coconut
HOW TO MAKE                
1.       Heat the oil.
2.       Slice the onion. Then enter into the oil. Fry until fragrant.
3.       Pour enough water into the "cao" and add grated coconut or egg
4.       Add MSG and sugar.
5.       Then enter "cao" into the pan. Boil until boiling.
6.       Cao ready to serve. More delicious when eaten with cucumber.



 CONCLUSION


CAO is a one of many typical food from Pangkep regency. SUMPANG BITA



A.  HISTORICAL BACKGROUND OF SUMPANG BITA


Sumpang Bita Prehistoric Park is located at Sumpang Bita Village, Balocci District, Pangkep regency, South Sulawesi Province. In this area, there are two prehistoric caves which are Sumpang Bita cave and Bulu Sumi cave.
Sumpang Bita and Bulu Sumi cave are natural cave formed since ancient time. For the first time, Sumpang Bita cave found on 1931 by Frist and Paul Sarassin from Swiss. But, some say that Sumpang Bita cave found by a local named Lantara Dg Paduni on 1974.
Sumpang means door and Bita is a name of village that is located behind the cave. So, Sumpang Bita was the gate to the Bita’s village.
After Lantara Dg Paduni found this cave, Preservation for Archaelogy Heritage Office of Makassar in collusion with Department of History and Archaelogy of Literature Faculty of Hasanuddin University held an excavation as Sumpang Bita cave and Bulu Sumi cave. Based on excavation result, and also in the framework of preservation of those caves as cultural heritage that needs to be protected and conserved, then an act of structuring  both in the caves and its surroundings is accomplished, such as installing iron-wire fence around, stairs-path making, garden making, information house making and guard post making.
The preservation is carried out upon central government sponsored funding and also from local government of Pangkep such as land allowance for 22 ha. 
Sumpang Bita cave is the largest cave at Pangkep Regency even at South Sulawesi. The cave is facing to the east. It’s oral cavity has 10 meters high, 14 meters wide and 50 meters depth. The inner area is divided into to large rooms and bounded by a middle wall. Room 1 located at the north, containing of rock art painting of jumping big deer facing some negative hand stencil paintings. While at the south room there are rock art painting of Sampan (small boat) below the two deer-hog painting which the heads are in downward position. There are a lot of negative hand stencil paintings in this room. Those are using red paint. There are two negative hand stencils, with forearms and the others are not.

The total of negative hand stencils:
§  There are 15 negative hand stencils from the right hand of adults.
§  There are 21 negative hand stencils from the left hand of adults.
§  There are 12 negative hand stencils from the right hand of children.
§  There are 4 negative hand stencils from the left hand of children.
§  There is 1 negative hand stencils was broken.
The total of negative foot stencils:
§  There is 1 negative foot stencils from the right foot of adult.
§  There is 1 negative foot stencils from the left foot of adult.
Based the information of some experts that the color of red symbolizes of braveness, hopes and life. Furthermore, the meaning of negative hand and foot stencil paintings and Sampan painting are a hope for salvation, free from dangerous in life. However, some say that food stencil painting means a prayer for someone who traveled far away to get a salvation. While deer-hog painting is a symbol to get animal easily. Then Sampan painting means a pray to get marine safety or a transportation for spirit to the heaven.
Based on those painting evidences at Sumpang Bita cave, concluded that the cave is a place for ceremony and not a place to get and produce food.

B.  SUMPANG BITA IN FUTURE

In the future, the development of Sumpang Bita is depend on the central government. If the government want to beautify this archeological park, the subordinate will develop the parks, such as add some havens along the stairs so the people can take a rest there when they feel tired to climb the stair.

C.  The bias of sumpang bita as picnic resort
As picnic resort almost every day, Sumpang Bita get so many visitors, off course it will make many advantage. But, beside that many visitors also can cause the bad effect to this archeological park. Sometimes, the visitors did some actions that can make the environment around the cave, spattered the walls, seat, and information board with handwriting. This thing can decrease the beauty of the cave and made it look dirty.
D.  Contribution of sumpang bita toward society
As a Picnic resort, Sumpang Bita has many advantages. One of them is the Contribution of Sumpang Bita toward society. Sumpang Bita could increase the foreign exchange. Based on this situation, absolutely it can make profitable toward the government. Not only that, the historical remains of Sumpang Bita could be a valuable cultural heritage.
E.  HOW TO KEEP SUMPANG BITA
To keep the perfection of this heritage, there must be the preservation of the cave. This preservation is done to make the next generation can enjoy the culture. Based on the observation that we have done directly through interviews with the tour guides in the archeological park. There are some things that we have to do to preserve the cave f Sumpang Bita. Such as:
1.    The keeper of Sumpang Bita should lock the door again when there are no more visitor
2.    For the visitors, please don’t damage the cave! Such as spattered the walls or throw the rubbish anywhere
3.    Keep the cleanliness of Sumpang Bita
4.    Visit the cave of Sumpang Bita. If we visit the cave of Sumpang Bita, it can make the historical heritages will known by the publish. So, it can make Sumpang Bita famous in all ever this country even in the abroad.

First, let thank and pray unto God Allah swt who has been giving us mercies and blessing so we can finished the simple paper on the time, although with a limitations and simplicity because of our limited abilities.
This simple paper contains information about Culinary Typical Areas Pangkep or more specifically discusses about CUCURU BAYAO. We hope this simple paper can be useful for all of us.

EXPLAIN ABOUT CUCURU BAYAO

Indonesia is a country which has a beautiful location, lots of traditional foods, and of course consist of many ethnics. Indonesia is separated into 34 provinces and Each provinces have their own culture in which to show the caracteristics of such provinces each. Nowdays, Indonesia is a country that still use some traditional cultures.
This simple paper explained one of the traditional food in Indonesia called CUCURU BAYAO. CUCURU BAYAO is a typical food from Pangkep and Maros regency. Cucuru Bayao consist from a two words, they are Cucuru means cucuru cake, and Bayao means egg. So, Cucuru Bayao is a cucuru cake who made from eggs.
Cucuru bayao formed chircle, it is golden, and is very sweet taste. It is maken so on purpose in order to distinguish among buginese ethnic and another ethnics. Now, lets take a good look at the way it’s formed, why does it must be circle? The answer is Buginese ethnic has been expecting that circle is symbolized as an unity of Buginese ethnic that is never ever be apart. Next, lets take a good look at it’s colour,does it must be golden? The answer is “yes,it must be so”, cause if it’s not it can’t be called Cucuru Bayao. The golden of it colour have a meaning, the golden colour symbolized as the sun, because the sun symbolizes prosperity and safety. Many people think that a golden colour of Cucuru Bayao that symbolizes the magnificence, glory and greatness, so in the event that aims for good life this cake will certainly be present in the event. And the last, lets take a good look at it’s taste, why does it must be sweet? In order to make a sweet taste then Cucuru Bayao is given much sugar. So the answer of such question is sweet taste symbolizes how beautiful and sweet Buginese ethnic is. So, diabetics must be careful with the Cucuru Bayao.
If want to make Cucuru Bayao, the maker must comply a certain regulatory, they are : the maker should be clean, wearing a nice clothes, and shouldn't be mad and not be sullen. So, making a Cucuru Bayao requires a patience.



HOW TO MAKE CUCURU BAYAO

The Ingridients:

  • 20 egg yolks
  • 8 drops of a yellow dye
  • 50 g cake flour
  • 50 g walnuts

The Marinade:
  • 500 grams sugar
  • 600 ml of water
  • 2 pcs lemon, take the water
  • ½ tsp vanilla

Steps to make it:
  • Stir egg yolks and a yellow dye until blended, pour the flour, stir.
  • Prepare the cupcake mold that spread by some oil, pour the dough.
  • Steam until half cooked over low heat, decorative with walnut and then steam again until cooked.
  • The marinade: boil water, sugar, lemon and vanilla. Set aside.
  • Remove the cake from the mold and enter the into the marinade water and serve.
